The Caramel Waffle Cookie

waffle cookieAfter the meal when you are serving the guests their coffee, it can sometimes get cold if they are having a late night out on the dance floor. One great idea to keep this from happening is by serving the coffee with a caramel waffle cookie on top, which keeps in the heat of the coffee, while warming up the caramel center of the waffle.

So, what is a waffle cookie? A vanilla and cinnamon cookie dough is pressed between flame heated waffle irons, split, and filled with fresh homemade caramel. The caramel heats and melts as it sits over the warm coffee, and then can be broken in two to allow the caramel to pour into the coffee.
