champagne cakeYou do see a lot of recipes online for all kinds of fancy champagne cakes but the simplest and most elegant of champagne cakes doesn’t even have icing. It is simply a sponge cake that tastes heavily of the celebratory taste of champagne. Unadorned with slick swirls of gooey icing this type of cake is very simple and elegant and goes good with tea at the end of a meal. It is definitely more of a sophisticated choice when it comes to champagne wedding cakes, which can be a little too gooey sometimes

The baking blog known as Baking Bites talks about a champagne chiffon version of this that is very light and is accomplished by beating in real champagne of any type in with egg whites in the cake recipe. The result is a plain light slab of yellow cake.

Like other champagne cakes this would go well with fruits like mango or papaya or raspberries, blueberries or strawberries.

You could probably make this type of chiffon cake with any kind of light alcohol including a mojito type pre mix or a sparkling strawberry wine.
