Edible wedding flower arrangement usually refer to food that has been constructed to look like fruit and not necessarily a bouquet made out flowers that you could eat (although technically this is absolutely possibly, especially if you had a bouquet of dandelions on the table.)

These types of bouquets can be quite elegant or quite simple depending on where you order them. Basically they consist of picks or dowels upon which pieces of fruit or whole fruit has been placed in such a way that they resemble flowers. For instance, a piece of star fruit cut sideways could serve as the petals for a flower that has a melon ball center. Strawberries serve as rose blossoms as shavings of papaya and green melon serve as foliage.

You can see examples of these types of centerpieces at Edible Arrangements, which offer several different types made out of both domestic and tropical fruits. Sometimes the fruit is chocolate dipped to give it extra pizzaz or a more interesting look.
